A different take on the typical hot cross bun - Hot Cross Bun Bread & Butter Pudding (mouth watering) 

Hot Cross Buns are a fan favourite at my house, usually grilled to a perfect crunch and then lathered with a good amount of butter - delicious! This year though, I have come across a recipe by VJ Cooks, she is a NZ based food blogger that creates lots of easy family friendly meals, The Hot Cross Bun Bread & Butter Pudding that she has created looks amazing and I can't wait to give it a go this Easter, along side some vanilla ice cream (and a few chocolate eggs).

INGREDIENTS

6 hot cross buns
30g butter, softened
2 eggs
1 cup milk
1 cup cream
½ tsp cinnamon
¼ cup caster sugar
1 tsp vanilla essence
1 tsp icing sugar

INSTRUCTIONS

  1. Preheat oven to 180°C fan bake. Grease a large bowl with butter.
  2. Slice hot cross buns 1 cm thick and spread each piece with butter. Arrange slices side by side in the bowl.
  3. In a separate bowl whisk together eggs, milk, cream, cinnamon, sugar and vanilla then pour over the hot cross buns.
  4. Leave to soak for 10 minutes before putting it in to the oven.
  5. Bake for 35 mins until golden and cooked through. 
  6. Dust with icing sugar and serve with ice cream or custard.
